OT -- Peach Cobbler

Made this late yesterday afternoon ...

Prep Time: 20 Minutes
Cook Time: 45 Minutes 	
Ready In: 1 Hour 10 Minutes
Yields: 6 servings

INGREDIENTS:
3 fresh peaches - peeled, pitted and sliced
1 teaspoon ground cinnamon
1 1/2 cups white sugar

1/2 cup shortening
1 cup white sugar	
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk

2 cups boiling water
3 tablespoons butter

DIRECTIONS:
1.	
Preheat oven to 350 degrees F (175 degrees C). Grease a 10x10 inch 
baking dish.
2.	
Stir together peaches with cinnamon and 1 1/2 cups sugar. Set aside.
3.	
In a medium bowl, cream together shortening and 1 cup sugar. Mix in 
flour, baking powder and salt alternately with milk. Pour into prepared 
pan. Top with peach mixture. Drop butter in boiling water and pour all 
over peaches.
4.	
Bake in preheated oven 40 to 45 minutes, until golden brown.

It was very good! Hard to go wrong with that much sugar in it.

The locally grown fruit this year is outstanding.  I bought a basket of 
peaches last week and was down to the last 3 when I found this recipe.

The last time I made a cobbler was a couple of years ago, so I was 
unsure about pouring 2 cups of hot water over everything -- as it turns 
out, the cake mix floats to the top and the cinnamon & sugar coated 
fruit sink thru it.  The water forms a thick yummy syrup.

Today I've got apples on the shopping list -- the cobbler didn't take 
long to put together so I'll likely use the recipe again using apples or 
pears.

That's it!!

Making the cobbler was lot more fun (and rewarding!) then smoking. Eh.

Every day something to look forward.

Tonight I'll be trying this Salisbury Steak recipe ...
