This recipe is pure magic. The two main ingredients
are healthy but I've never cared for the taste. Blended
together in this recipe, the result is the consistency of
mashed potatoes and has a sweetness that keeps me
asking "did you put any sweetener in this?"
SQUASH CASSEROLE
1 med to large butternut squash
2 med sweet potatoes (dark red is better)
1/2 cup butter, melted *
2 egg whites
salt / pepper to taste
1/2 teaspoon cinnamon
* this seemed like a lot of butter to me, though
the recipe makes 8 - 10 servings. We made
it with 1/4 cup butter last time and it was great,
though it lacked the buttery smooth consistency
that we get with more butter.

cust squash in half and remove seeds. place face
down in microwave. poke several holes in skin
with fork. microwave 15 minutes or until very soft.
poke skin of sweet potatoes and mocrowave 15 minutes until
very soft.
scoop out meat of squash & potatoes, discard skins or mail them to %
place in food processor or blender with butter, salt/pepper & cinnamon.
process until smooth.
beat egg whites until stiff peaks form and fold into squash.
place in casserole thingy and bake @[EMAIL PROTECTED]
350 degrees for 30 to 45 minutes.
(alternative to microwave: bake @[EMAIL PROTECTED]
400 degrees until soft. Or, remove
skins
& seeds ... cube and boil in water until very soft)
